Yellow Eye (Stueben Beans)

The Yellow Eye Stueben Bean (Phaseolus Vulgaris) is related to the Kidney Bean. They are about 1/2 inch in length, oval shaped bean, ivory colored with a mustard colored splotch radiating from the inner seam. The very center of the inner seam has a white center encircled by a light brown ring. Yellow Eye Stueben beans have a mild flavor, firm texture and the colors are retained after cooking.
