Chef Bottura commissioned one of Italy's best Tuscan producers to create the oil he uses for all purposes at his restaurant in Modena. Produced from Mariaolo and Leccino olives only, its taste is harmonious, less forward and more versatile than most Tuscan oils and is perfect for salads, vegetables and fish.
